chicken and spring onion mash
200 g Chicken breasts
250 g Potatoes, peeled and chunked
45 g Broccoli
45 g Green beans
50 ml Milk
1 tsp Margarine
4 Spring onions
150 g Cherry tomatoes
1 tbsp Balsamic vinegar

 

Lightly spray a non-stick pan with oil and place over a medium heat, add the chicken, cover the pan and cook gently for 15 - 20 mins, turning occasionally until they are cooked right through. Remove and keep warm
While the chicken is cooking, boil the potatoes until tender, cook the broccoli and green beans
Meanwhile put the milk, margarine and spring onions in a small container and cook in the microwave for 2 mins on medium, or on the hob until the onions start to soften
Add tomatoes to the pan the chicken was cooked in, stir them briskly over a medium to high heat to break them up. Stir in the balsamic vinegar
Mash the potatoes with the milk and spring onion mixture. Divide the mash between two plates, top with the chicken breasts and pour over the tomato sauce
Serve immediately with the cooked green beans and broccoli
