chicken and spring onion mash
| 200 g | Chicken breasts |
| 250 g | Potatoes, peeled and chunked |
| 45 g | Broccoli |
| 45 g | Green beans |
| 50 ml | Milk |
| 1 tsp | Margarine |
| 4 | Spring onions |
| 150 g | Cherry tomatoes |
| 1 tbsp | Balsamic vinegar |
| Lightly spray a non-stick pan with oil and place over a medium heat, add the chicken, cover the pan and cook gently for 15 - 20 mins, turning occasionally until they are cooked right through. Remove and keep warm |
| While the chicken is cooking, boil the potatoes until tender, cook the broccoli and green beans |
| Meanwhile put the milk, margarine and spring onions in a small container and cook in the microwave for 2 mins on medium, or on the hob until the onions start to soften |
| Add tomatoes to the pan the chicken was cooked in, stir them briskly over a medium to high heat to break them up. Stir in the balsamic vinegar |
| Mash the potatoes with the milk and spring onion mixture. Divide the mash between two plates, top with the chicken breasts and pour over the tomato sauce |
| Serve immediately with the cooked green beans and broccoli |
