PINEAPPLE UPSIDE DOWN CAKE
| 1 tbsp | Brown sugar |
| 1 small can | Pineapple slices, drained |
| 4 oz | Margarine |
| 4 oz | Caster sugar |
| 2 medium | Eggs |
| 4 oz | Self raising flour |
| 2 tbsp | Milk |
| Sprinkle some sugar on the base of the dish, arrange pineapple slices on top of sugar in base. |
| Cream together the marg and sugar until light and fluffy. Beat in the eggs gradually. Fold in the flour and mix to a soft consistency with the milk. |
| Spoon the mixture over the pineapple and cook on a MEDIUM power for 6 - 7 minutes or until cooked. Leave to cool slightly before turning upside-down on a serving plate. |
