PINEAPPLE UPSIDE DOWN CAKE
1 tbsp Brown sugar
1 small can Pineapple slices, drained
4 oz Margarine
4 oz Caster sugar
2 medium Eggs
4 oz Self raising flour
2 tbsp Milk

 

Sprinkle some sugar on the base of the dish, arrange pineapple slices on top of sugar in base.
Cream together the marg and sugar until light and fluffy. Beat in the eggs gradually. Fold in the flour and mix to a soft consistency with the milk.
Spoon the mixture over the pineapple and cook on a MEDIUM power for 6 - 7 minutes or until cooked. Leave to cool slightly before turning upside-down on a serving plate.
