Air Fryer Chicken Chorizo with New Potatoes and Onions
4 bone-in, skin-on chicken thighs
½ lb chorizo ​​sausage, sliced
1 lb new potatoes, halved
1 large onion, sliced
2 tbsp olive oil
1 tsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
½ tsp dried thyme
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)

 

Preheat your air fryer to 190°C.
In a large bowl, combine the chicken thighs, sliced ​​chorizo, new potatoes and sliced ​​onions.
Drizzle the mixture with olive oil and toss to coat.
In a small bowl, combine smoked paprika, garlic powder, onion powder, dried thyme, salt and pepper.
Sprinkle spice mixture over chicken, chorizo, potatoes and onions, making sure to distribute evenly.
Place mixture in air fryer basket, arranging ingredients in a single layer.
Air fry for 25 to 30 minutes or until chicken reaches an internal temperature of 165°F and potatoes are tender, shaking basket or stirring ingredients halfway through cooking.
Garnish with chopped fresh parsley before serving.
