Air Fryer Chicken Chorizo with New Potatoes and Onions
4 | bone-in, skin-on chicken thighs |
½ lb | chorizo sausage, sliced |
1 lb | new potatoes, halved |
1 large | onion, sliced |
2 tbsp | olive oil |
1 tsp | smoked paprika |
1 tsp | garlic powder |
1 tsp | onion powder |
½ tsp | dried thyme |
Salt and pepper, to taste | |
Fresh parsley, chopped (for garnish) |
Preheat your air fryer to 190°C. |
In a large bowl, combine the chicken thighs, sliced chorizo, new potatoes and sliced onions. |
Drizzle the mixture with olive oil and toss to coat. |
In a small bowl, combine smoked paprika, garlic powder, onion powder, dried thyme, salt and pepper. |
Sprinkle spice mixture over chicken, chorizo, potatoes and onions, making sure to distribute evenly. |
Place mixture in air fryer basket, arranging ingredients in a single layer. |
Air fry for 25 to 30 minutes or until chicken reaches an internal temperature of 165°F and potatoes are tender, shaking basket or stirring ingredients halfway through cooking. |
Garnish with chopped fresh parsley before serving. |
