Air Fryer Bang Bang Chicken Skewers
1 lb chicken breast, cut into 1-inch cubes
1 tbsp olive oil
Salt and pepper to taste
½ cup panko breadcrumbs
¼ cup cornstarch
1 egg, beaten
Skewers (wooden or metal)
For the bang bang sauce
¼ cup mayonnaise
2 tbsp sweet chili sauce
1 tbsp sriracha sauce (adjust to your spice preference)
1 tsp honey
1 tsp rice vinegar
Salt to taste

 

Prepare the Chicken:
In a bowl, toss the chicken cubes with olive oil, salt, and pepper. Set aside.
Coat the Chicken:
In a shallow dish, combine panko breadcrumbs and cornstarch. Dip each chicken cube first into the beaten egg, then roll it in the breadcrumb mixture, pressing gently to coat evenly.
Preheat the Air Fryer:
Preheat your air fryer to 200°C for about 3-5 minutes.
Air Fry the Chicken:
Place the coated chicken cubes on the air fryer basket or tray, ensuring they are not overcrowded.
Air fry at 200°C for 10-12 minutes, shaking halfway through, until the chicken is golden brown and crispy on the outside and cooked through.
Make the Bang Bang Sauce:
In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, rice vinegar, and salt. Adjust the spice level by adding more sriracha if desired.
Serve:
Once the chicken skewers are cooked, drizzle the Bang Bang sauce over the top or toss the chicken cubes gently in the sauce for an even coat.
Serve the chicken skewers with extra sauce on the side for dipping.
