Lasagna Grilled Cheese
8 slices Italian bread
½ cup marinara sauce
1 cup ricotta cheese
1 cup shredded mozzarella cheese
½ cup grated Parmesan cheese
½ tsp Italian seasoning
½ lb ground beef
1 tbsp olive oil
Salt and pepper, to taste
4 tbsp butter, softened

 

Prepare the Ground Beef
In a skillet over medium heat, add the olive oil. Once hot, add the ground beef. Cook until browned, breaking it apart with a spoon. Drain excess fat, season with salt, pepper, and Italian seasoning, and set aside.
Prepare the Ricotta Mixture
In a bowl, combine the ricotta cheese, Parmesan cheese, and a pinch of Italian seasoning. Mix until well combined.
Assemble the Sandwiches
Spread butter on one side of each slice of bread. On the unbuttered side of four slices, layer a spoonful of marinara sauce, the ricotta mixture, a portion of cooked ground beef, and shredded mozzarella. Top each with another slice of bread, buttered side facing out.
Cook the Sandwiches
Heat a skillet or griddle over medium heat. Place the sandwiches in the skillet and cook for 3-4 minutes per side, or until the bread is golden brown and the cheese is melted.
Serve:
Slice each sandwich in half and serve hot with extra marinara sauce for dipping.
