Lasagna Grilled Cheese
| 8 slices | Italian bread |
| ½ cup | marinara sauce |
| 1 cup | ricotta cheese |
| 1 cup | shredded mozzarella cheese |
| ½ cup | grated Parmesan cheese |
| ½ tsp | Italian seasoning |
| ½ lb | ground beef |
| 1 tbsp | olive oil |
| Salt and pepper, to taste | |
| 4 tbsp | butter, softened |
| Prepare the Ground Beef |
| In a skillet over medium heat, add the olive oil. Once hot, add the ground beef. Cook until browned, breaking it apart with a spoon. Drain excess fat, season with salt, pepper, and Italian seasoning, and set aside. |
| Prepare the Ricotta Mixture |
| In a bowl, combine the ricotta cheese, Parmesan cheese, and a pinch of Italian seasoning. Mix until well combined. |
| Assemble the Sandwiches |
| Spread butter on one side of each slice of bread. On the unbuttered side of four slices, layer a spoonful of marinara sauce, the ricotta mixture, a portion of cooked ground beef, and shredded mozzarella. Top each with another slice of bread, buttered side facing out. |
| Cook the Sandwiches |
| Heat a skillet or griddle over medium heat. Place the sandwiches in the skillet and cook for 3-4 minutes per side, or until the bread is golden brown and the cheese is melted. |
| Serve: |
| Slice each sandwich in half and serve hot with extra marinara sauce for dipping. |
