QUEEN OF PUDDINGS
3 oz Breadcrumbs
4 oz Sugar
2 medium Eggs, separated
¾ pint Milk
1 oz Butter
2 tbsp Jam

 

Heat milk in just for 4½ minutes on full power.
Add 1oz sugar and butter. Pour over breadcrumbs and stir in egg yolks.
Leave to stand for 15 minutes.
Cook for 5 minutes on full power stirring half way through.
Heat the jam and spread over mixture.
Whisk egg whites to a stiff mixture, then fold in remaining sugar. Spread on top of pudding.
Back in preheated oven at 160°C for 20 minutes.
