QUEEN OF PUDDINGS
| 3 oz | Breadcrumbs |
| 4 oz | Sugar |
| 2 medium | Eggs, separated |
| ¾ pint | Milk |
| 1 oz | Butter |
| 2 tbsp | Jam |
| Heat milk in just for 4½ minutes on full power. |
| Add 1oz sugar and butter. Pour over breadcrumbs and stir in egg yolks. |
| Leave to stand for 15 minutes. |
| Cook for 5 minutes on full power stirring half way through. |
| Heat the jam and spread over mixture. |
| Whisk egg whites to a stiff mixture, then fold in remaining sugar. Spread on top of pudding. |
| Back in preheated oven at 160°C for 20 minutes. |
