THAI CHICKEN CURRY
1 tbsp Oil
4 large Chicken breasts, cut into chunks
4 tbsp Red curry paste
1 tbsp Fish sauce
1 tsp Dark brown sugar
14 fl oz Coconut milk
6 Kaffir lime leaves, shredded

 

Heat the oil and brown the chicken.
Lower the heat, add curry paste, fish sauce and sugar. Stir and coat the chicken thoroughly.
Add the coconut milk and lime leaves. Bring to the boil and simmer for 20 minutes.
Serve with boiled rice.
