SAUSAGE AND SPAGHETTI
1 tbsp Vegetable oil
8 Sausages
1 medium Onion, finely chopped
1 can Chopped tomatoes
2 tbsp Tomato puree
1 tbsp Parsley, finely chopped
Salt and pepper
10 oz Spaghetti
1 tbsp Olive oil
1 Extra parsley to garnish

 

Pre-cook sausages and slice into ½" bits.
Heat the oil and cook the onion over a gentle heat until and soft. Add the tomatoes and bring to the boil. Stir in the tomato puree. Add the sausages, then stir in the parsley and season.
Cook the pasta in boiling, salted water until just tender.
Drain the pasta, divide between the plates and spoon over the sausage sauce. Sprinkle with parsley.
