SAUSAGE AND SPAGHETTI
| 1 tbsp | Vegetable oil |
| 8 | Sausages |
| 1 medium | Onion, finely chopped |
| 1 can | Chopped tomatoes |
| 2 tbsp | Tomato puree |
| 1 tbsp | Parsley, finely chopped |
| Salt and pepper | |
| 10 oz | Spaghetti |
| 1 tbsp | Olive oil |
| 1 | Extra parsley to garnish |
| Pre-cook sausages and slice into ½" bits. |
| Heat the oil and cook the onion over a gentle heat until and soft. Add the tomatoes and bring to the boil. Stir in the tomato puree. Add the sausages, then stir in the parsley and season. |
| Cook the pasta in boiling, salted water until just tender. |
| Drain the pasta, divide between the plates and spoon over the sausage sauce. Sprinkle with parsley. |
