SPICY SAUSAGE CASSOULET
2 tbsp Oil
1 lb Smoked sausage
1 large Onion, sliced
2 cloves Garlic, crushed
1 Red pepper, sliced
½ tsp Cayenne pepper
1 can Chopped tomatoes
3 tbsp Tomato puree
1 Pork stock cube, dissolved in 150ml boiling water
2 tbsp Creme fraiche
1 tbsp Chopped parsley
Black pepper

 

Cut sausages into 1" pieces.
Heat oil in a large saucepan.
Fry onion, garlic and pepper for 2 minutes.
Add cayenne, tomatoes, tomato puree, stock and sausages.
Stir well, cover and simmer for 20 minutes.
Add creme fraiche, heat through, season, sprinkle with parsley and serve.
