Firecracker Chicken
| 1 lb | chicken breast, cut into bite-sized pieces |
| 1 tbsp | olive oil |
| ¼ cup | cornstarch |
| 1 | bell pepper, diced |
| 1 | onion, chopped |
| 3 cloves | garlic, minced |
| ¼ cup | soy sauce |
| ¼ cup | honey |
| ¼ cup | hot sauce |
| 2 tbsp | apple cider vinegar |
| 1 tsp | sesame oil |
| Sesame seeds, for garnish | |
| Green onions, chopped, for garnish |
| In a large bowl, toss the chicken pieces with cornstarch until fully coated. |
| Heat olive oil in a large skillet over medium heat. Add the chicken and cook until golden brown on all sides. |
| Remove the chicken and set aside. In the same skillet, add the bell pepper and onion, cooking until they begin to soften. |
| Add garlic and sauté for an additional minute. |
| Return the chicken to the skillet. In a small bowl, mix together soy sauce, honey, hot sauce, vinegar, and sesame oil. Pour this mixture over the chicken and vegetables. |
| Cook for 5-7 minutes or until the sauce has thickened and the chicken is cooked through. |
| Garnish with sesame seeds and green onions before serving. |
