Firecracker Chicken
1 lb chicken breast, cut into bite-sized pieces
1 tbsp olive oil
¼ cup cornstarch
1 bell pepper, diced
1 onion, chopped
3 cloves garlic, minced
¼ cup soy sauce
¼ cup honey
¼ cup hot sauce
2 tbsp apple cider vinegar
1 tsp sesame oil
Sesame seeds, for garnish
Green onions, chopped, for garnish

 

In a large bowl, toss the chicken pieces with cornstarch until fully coated.
Heat olive oil in a large skillet over medium heat. Add the chicken and cook until golden brown on all sides.
Remove the chicken and set aside. In the same skillet, add the bell pepper and onion, cooking until they begin to soften.
Add garlic and sauté for an additional minute.
Return the chicken to the skillet. In a small bowl, mix together soy sauce, honey, hot sauce, vinegar, and sesame oil. Pour this mixture over the chicken and vegetables.
Cook for 5-7 minutes or until the sauce has thickened and the chicken is cooked through.
Garnish with sesame seeds and green onions before serving.
