Cajun Chicken Casserole
| 1 | onion, chopped |
| 3 cloves | garlic, crushed |
| 1 | chilli, chopped finely |
| 3 tsp | Cajun spice |
| 1 tsp | paprika |
| Red pepper, sliced | |
| 400 g | chicken pieces (thigh, legs or breast) |
| 2 sticks | celery, diced |
| 1 tin | chopped tomatoes |
| Allow 15 minutes to preheat your slow cooker. |
| Add all ingredients. Make sure the stock is hot when adding as this will keep the temperature. |
| Turn your slow cooker to low and cook for 6-8, or if you want a faster meal, turn to high for 4-5 hours. |
| Healthy swap: To cut down fat, remove any skin or fat the chicken. If you want a lower fat dish, opt for turkey. |
