Cajun Chicken Casserole
1 onion, chopped
3 cloves garlic, crushed
1 chilli, chopped finely
3 tsp Cajun spice
1 tsp paprika
Red pepper, sliced
400 g chicken pieces (thigh, legs or breast)
2 sticks celery, diced
1 tin chopped tomatoes

 

Allow 15 minutes to preheat your slow cooker.
Add all ingredients. Make sure the stock is hot when adding as this will keep the temperature.
Turn your slow cooker to low and cook for 6-8, or if you want a faster meal, turn to high for 4-5 hours.
Healthy swap: To cut down fat, remove any skin or fat the chicken. If you want a lower fat dish, opt for turkey.
