CAJUN STYLE TURKEY
1 tbsp Vegetable oil
1 med Onion, chopped
2 cloves Garlic, crushed
4 tsp Paprika
3 tsp Oregano
5 oz Long-grain rice
½ ltr Hot chicken stock
4 tsp Cajun chicken seasoning
2 Turkey breast fillets
1 oz Butter

 

Heat the oil in a large pan. Add the onion and fry for 5 minutes until soft. Add the garlic, paprika, oregano and rice. Season. Cook, stirring for 5 minutes.
Add the chicken stock, bring to the boil and simmer, uncovered, for about 10 minutes, or until the rice is just tender and most of the liquid has evaporated.
Meanwhile, rub the Cajun seasoning into both sides of the turkey fillets. Melt the butter in the frying pan and cook the turkey fillets for about 5 minutes each side. Slice the turkey and serve on the rice. Garnish with oregano.
