CAJUN STYLE TURKEY
| 1 tbsp | Vegetable oil |
| 1 med | Onion, chopped |
| 2 cloves | Garlic, crushed |
| 4 tsp | Paprika |
| 3 tsp | Oregano |
| 5 oz | Long-grain rice |
| ½ ltr | Hot chicken stock |
| 4 tsp | Cajun chicken seasoning |
| 2 | Turkey breast fillets |
| 1 oz | Butter |
| Heat the oil in a large pan. Add the onion and fry for 5 minutes until soft. Add the garlic, paprika, oregano and rice. Season. Cook, stirring for 5 minutes. |
| Add the chicken stock, bring to the boil and simmer, uncovered, for about 10 minutes, or until the rice is just tender and most of the liquid has evaporated. |
| Meanwhile, rub the Cajun seasoning into both sides of the turkey fillets. Melt the butter in the frying pan and cook the turkey fillets for about 5 minutes each side. Slice the turkey and serve on the rice. Garnish with oregano. |
