CAJUN STYLE TURKEY
1 tbsp | Vegetable oil |
1 med | Onion, chopped |
2 cloves | Garlic, crushed |
4 tsp | Paprika |
3 tsp | Oregano |
5 oz | Long-grain rice |
½ ltr | Hot chicken stock |
4 tsp | Cajun chicken seasoning |
2 | Turkey breast fillets |
1 oz | Butter |
Heat the oil in a large pan. Add the onion and fry for 5 minutes until soft. Add the garlic, paprika, oregano and rice. Season. Cook, stirring for 5 minutes. |
Add the chicken stock, bring to the boil and simmer, uncovered, for about 10 minutes, or until the rice is just tender and most of the liquid has evaporated. |
Meanwhile, rub the Cajun seasoning into both sides of the turkey fillets. Melt the butter in the frying pan and cook the turkey fillets for about 5 minutes each side. Slice the turkey and serve on the rice. Garnish with oregano. |
