SPICY SWEETCORN PATTIES
1 oz | Butter |
2 tsp | Cumin seeds |
2 large | Spring onions, finely chopped |
1¾ lb | Potatoes, boiled and mashed |
4 oz | Cheese, grated |
4 tbsp | Freshly grated parmesan |
¼ tsp | Tabasco |
1 medium | Egg, beaten |
8 oz | Frozen sweetcorn |
1 oz | Plain flour |
2 tbsp | Oil |
Melt the butter in a frying pan and add the cumin. Cook over a gentle heat for 2 minutes then add the spring onion and cook for a further 1 minute. |
Put the potato into a large bowl. Add the spring onion mixture, both cheeses, tabasco, egg and sweetcorn. Season well and mix thoroughly. Divide the mixture into 12 and form into patties. Lightly coat each one with flour. |
Heat a little oil in a large frying pan. Cook patties in batches of 4 for about 2 minutes each side until browned and crispy. |
