Greek Chicken Gyros with Cucumber Tzatziki
1 lb chicken breast, sliced into strips
2 tbsp olive oil
2 tsp dried oregano
1 tsp garlic powder
Salt and pepper to taste
4 pita breads
1 cup lettuce, shredded
1 tomato, diced
½ red onion, thinly sliced
1 cucumber, grated
1 cup Greek yogurt
1 tbsp white vinegar
2 cloves garlic, minced
Fresh dill, chopped (optional)

 

In a bowl, combine olive oil, oregano, garlic powder, salt, and pepper. Add chicken strips and marinate for at least 30 minutes.
Preheat a grill or skillet over medium-high heat. Cook the marinated chicken for 6-8 minutes until fully cooked.
While the chicken is cooking, prepare the tzatziki by mixing grated cucumber, Greek yogurt, vinegar, minced garlic, and dill in a bowl. Season with salt to taste.
Warm the pita breads on the grill or in a pan for about 1 minute on each side.
Assemble the gyros by placing cooked chicken on the pita and topping with lettuce, tomato, onion, and tzatziki sauce.
Roll up the pita and serve immediately.
