Hoisin Chicken with Noodles
450 g chicken breast, thinly sliced
1 tbsp olive oil or sesame oil
3 cups cooked egg noodles
¼ cup hoisin sauce
2 tbsp soy sauce
1 tbsp honey
2 cloves garlic, minced
1 tsp grated fresh ginger
1 red bell pepper, sliced
1 cup broccoli florets
2 green onions, sliced
Sesame seeds for garnish

 

Heat the oil in a large skillet or wok over medium-high heat. Add the chicken slices and cook for 5-7 minutes until golden and cooked through. Remove from the skillet and set aside.
In the same skillet, add garlic, ginger, bell pepper, and broccoli. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
In a small bowl, mix hoisin sauce, soy sauce, and honey. Pour the sauce into the skillet and stir well to coat the vegetables.
Return the cooked chicken to the skillet and toss to coat in the sauce. Add the cooked noodles and stir until everything is combined and heated through.
Serve hot, garnished with green onions and sesame seeds.
