STUFFED MUSHROOMS
| 1 oz | Butter |
| 1 oz | Plain flour |
| ¼ pint | Milk |
| 3 oz | Cheddar cheese, grated |
| Salt and pepper | |
| 1 small | Onion, finely chopped |
| 2 rashers | Streaky bacon, chopped |
| 1 tbsp | Vegetable Oil |
| 1 clove | Garlic, crushed |
| 6 large | Flat mushrooms |
| 2 oz | Breadcrumbs |
| For the cheese sauce: Melt the butter, stir in the flour and make into a paste. Remove from the heat and gradually stir in the milk making sure it's lump free. Put back onto the heat to thicken, then stir in 50g (2oz) cheese and season. |
| Heat oil in frying pan, cook onion, bacon and garlic until soft. Add to the cheese sauce. |
| Wipe mushrooms. Remove stalks and chop them finely, add to the sauce. |
| Fill centre of the mushrooms with the sauce. Cover with breadcrumbs and sprinkle with the remaining cheese. |
| Bake in a preheated oven, 200°C, for 15 - 20 minutes, until golden brown. |
