chicken and chorizo soup
500 g chicken
100 g chorizo
2 peppers
1 red onion
2½ litres chicken stock (1 for chicken/1
400 g sweet potato (skin on weight)
2 carrots
2 tbsp curry powder
1 tbsp chilli powder
4 cloves garlic
Parsley and chilli powder to garnish

 

Add the chicken into a pot alongside 1L chicken stock and simmer for 12 minutes before shredding with 2 forks.
To a large soup pot add the chorizo for 2-3 minutes followed by the veg and spices.
Add in the remaining stock and simmer until veg is soft.
Blitz, add shredded chicken and enjoy.
